Readers	 who	 are	 familiar	 with	 my	 recipe	 books	 may	 already	 know	 that
I'm	 not	 fond	 of	 pork.	 Pigs	 are	 omnivorous	 foragers	 and	 their	 meat	 tends
to	harbor	toxins,	parasites	and	viruses.
	
Despite	my	preference	to	avoid	pork,	I	will	occasionally	indulge	in	a	bit	of
bacon.	I	only	purchase	organic	meat	products,	which	have	a	richer	flavor
and	fewer	toxins	and	other	harmful	elements.
	
A	with	 any	food,	 moderation	is	 key!	 Bacon	is	 high	in	 fat	and	 salt,	 which
make	it	a	threat	to	your	health	if	eaten	too	frequently!
