Spiced	Bean	and	Cheese	Tortillas

	

Ingredients	and	Prep:
1/2	cup	of	salsa.
1	cup	of	grated	cheese.
1	can	of	spicy	refried	beans.
1	jar	of	roasted	red	peppers	(drain	the	liquid	and	slice).
8	small	flour	or	corn	tortillas.
	

	

Cooking	Directions:
Preheat	the	oven	to	350	F.
Lightly	grease	a	large	baking	pan.
Combine	the	beans	and	salsa	in	a	bowl.
Spoon	a	bit	of	the	salsa	and	bean	mixture	onto	the	center	of	each	tortilla.
Top	each	tortilla	with	a	few	roasted	pepper	slices.
Roll	up	the	tortillas	and	place	them	in	the	pan	with	the	seam-side	down.
Place	aluminum	foil	over	the	dish.
Bake	the	tortillas	in	the	pre-heated	oven	for	10	minutes.
Remove	the	foil	and	sprinkle	cheese	over	the	top.
Continue	baking	for	another	couple	minutes,	until	the	cheese	has	melted
over	the	top.
	
	
Serving	Instructions,	Tips	&	Variations:	Consider	serving	the	tortillas
with	additional	salsa	on	the	side.
