Creamy Vegan Chicken Casserole
Ingredients and Prep:
1/3 cup of faux chicken stock.
1 cup of breadcrumbs.
1 cup of broccoli florets .
1 can of mixed peas and carrots.
1 container of vegan sour cream.
1 packet of onion and mushroom soup mix.
1 bag of chicken-style vegetarian strips, such as quorn strips.
Salt and pepper.
Cooking Directions:
Combine the sour cream, faux chicken stock and soup mix.
Stir the mix until it's smooth and slightly runny. If necessary, add some
additional faux chicken stock to thin the mixture.
If desired, add bit of salt and pepper for seasoning.
Combine the broccoli, carrots and peas, faux chicken strips and vegan
sour cream in a small casserole dish.
Sprinkle breadcrumbs over the top of the casserole.
Bake at 400 F for 20 minutes, or until you've browned the breadcrumbs
and the center is well-heated.
Serving Instructions, Tips & Variations: Serve this dish with rice.
Consider making your own biscuit dough mix for use in place of
breadcrumbs. If you're using your own biscuit dough, place it on top of
the casserole for the final 10 minutes of baking.
