Olive	Relish	Veggie	Kebabs	(GF)

	

Ingredients	and	Prep:
For	the	Kebabs:	3	tablespoons	of	olive	oil.
1	red	pepper,	cut	into	1-inch	chunks.
1	yellow	zucchini,	sliced	into	thick	rounds.
1	red	onion,	cut	into	1-inch	chunks.
1	bag	of	vegetarian	"steak"	strips.
Vegan	steak	seasoning,	to	taste.
16	dried	apricots.
6-8	skewers.

	
	

Cooking	Directions:
Preheat	a	grill	to	medium-high	heat.
Pour	olive	oil	into	a	bowl.
Dip	the	"steak"	strips	into	the	olive	oil,	then	apply	the	seasonings.
Thread	the	ingredients	onto	skewers	in	the	following	order:	"steak"	strips,

  red	pepper,	zucchini,	red	onion,	and	apricots.
Grill	for	2	to	4	minutes	on	each	side.

	
	

Ingredients	and	Prep:
For	the	Relish:	1	tablespoon	of	minced	fresh	garlic.
2	tablespoons	of	olive	oil.
2	tablespoons	of	capers	(rinsed,	dried,	and	chopped.)	1/4	cup	of	chopped
green	olives.
1/4	cup	of	fresh,	chopped	basil.
1	medium	diced	tomato.
Lemon	zest	and	juice	from	2	lemons.
Salt	and	pepper	for	seasoning.

	
	

Cooking	Directions:
Combine	the	relish	ingredients	in	a	bowl.
Mix.
Serve	the	relish	with	the	kebabs	and	a	side	of	rice.
