Cheesy	Pasta	Italiano

	

Ingredients	and	Prep:
¼	cup	(1	ounce)	of	shredded	Parmesan	or	mozzarella	cheese.
½	cup	of	chopped	onion.
¾	cup	of	2-ounce	uncooked	bow-tie	(farfalle)	pasta.
1	cup	of	fresh	sliced	mushrooms.
1	1/3	cups	of	frozen	vegetarian	quorn	(minced	style	or	pieces	will	work.)	2
cups	of	fresh	baby	spinach	leaves.
1	can	of	Italian-style	vegetable	soup.
	

	

Cooking	Directions:
Oil	a	frying	pan.
Cook	the	vegetarian	pieces,	onions	and	mushrooms	for	4	to	6	minutes.
The	mushrooms	should	be	hot	and	soft.	Stir	frequently.
Stir	in	the	soup.
Cover	the	pan	and	allow	it	to	reach	the	boiling	point.
Stir	in	the	pasta	and	turn	down	the	heat	to	a	medium-low	setting.
Cover	the	pan	and	simmer	for	10	minutes.
Add	the	spinach.
Uncover	and	cook	for	an	additional	3	to	5	minutes.	The	spinach	should
be	hot	and	slightly	wilted	in	appearance.	Stir	occasionally.
Remove	from	the	heat	and	sprinkle	cheese	over	the	top.

If	you're	serving	a	larger	group,	multiply	the	ingredient	quantities
proportionately.
