Bean	and	Veggie	Burgers

	

Ingredients	and	Prep:
1	tablespoon	of	cayenne	pepper.
2	tablespoons	of	olive	oil	OR	coconut	oil.
2	tablespoons	of	dried	cilantro.
1/4	cup	of	diced	onions.
1/2	cup	of	diced	red	bell	peppers.
1	cup	of	breadcrumbs.
7	cups	of	black	beans.
1	egg.
8	hamburger	buns.

	

Cooking	Directions:
If	you're	using	dried	beans,	you'll	need	to	rehydrate	them	by	soaking		the
black	beans	overnight.
Thoroughly	rinse	the	beans.
Boil	a	couple	cups	of	water	in	a	saucepan.
Pour	the	black	beans	into	the	water	and	cook	for	approximately	20
minutes	or	until	the	beans	are	tender.
Drain	away	excess	water	from	the	beans.
Place	the	beans	in	a	food	processor	along	with	the	diced	onions,	diced
bell	pepper,	eggs,	cayenne	pepper,	breadcrumbs	and	cilantro.	Process
the	mixture	into	fine	bits.
If	the	mixture	is	too	viscous	to	form	patties,	add	some	additional
breadcrumbs	to	the	mixture.
Form	mix	into	approximately	8	patties.
Heat	1	tablespoon	of	olive	oil	in	a	pan	over	medium	heat.
Put	4	patties	in	the	pan	and	cook	for	2	minutes	each	side.	Each	time	you
cook	additional	patties,	add	1	tablespoon	of	oil	to	the	pan.
	
Serving	Instructions,	Tips	&	Variations:	Pre-cooked	or	dried	tinned
black	beans	can	be	used	for	this	recipe.
Consider	using	a	healthy	hamburger	bun,	like	gluten-free	buns.
Consider	preparing	the	patties	one	day	ahead	of	time.	Simply	refrigerate
until	you're	ready	for	prepare	this	dish.
