“S” COOKIES OR FLORENCE COOKIES
Ingredients
2 ½ cups flour 3/4 cup confectioners sugar
1/2 cup butter 1 heaping teaspoon baking powder
2 eggs beaten 3 tablespoon milk
1 grated rind (zest) of a navel orange or lemon
Instructions
Mix flour, confectioners sugar, baking powder together.
Grate the rind of an orange or lemon with grater to make zest. Add zest to dry
ingredients and mix. Add softened butter, milk, eggs and mix by hand. When mixture is
thoroughly integrated, pour onto a floured board and knead until a soft dough is formed.
Add enough flour so ball of dough is not sticky. Break o small pieces of dough and roll
on counter and make an “S” shape. The roll should be the length of your hand and about
1/2 inch thick. Place cookies in a 350 degrees oven and bake about 15 minutes or until
golden brown. When cookies are done, cool them and add the almond frosting.
ALMOND FROSTING
Ingredients
2 teaspooons softened butter
1 teaspoon almond extract
1 ½ cup confectioners sugar for more if needed
3 tablespoons milk and half and half
Instructions
Mix almond extract into softened butter, add confectioners sugar and ten add milk
or half and half. Start to beat with a spoon until mixture is soft, smooth and glossy.
Add additional milk as needed. Spread on cookies and let dry.
Virginia “Nan” Mazzola made these cookies around Easter time and she always
made these cookies by hand. Nan always added the orange zest and these are often
called biscotti.
