VIRGINIA MAZZOLA’S FIG COOKIES

         Ingredients
        FIG MIXTURE:
        2 strings of figs chopped                                     juice of 1 large orange
        1 large orange peel grated                                   1 3/4 cup port wine
        1 cup water                                                  2 tablespoon cinnamon



        Instructions
        Mix together and cook for 15 minutes or until mixture begins to boil. When it comes
        to a boil, lower the temperature to a simmer and cook another 5 minutes. Refrigerate
        overnight before putting in dough.


         Ingredients
        COOKIE DOUGH:
        3 pounds flour                                                6 teaspoons baking powder
        1 3/4 cup sugar                                              1 pound Crisco


        Instructions
        Mix together and put on a floured board and make a well.


        Ingredients
        TO PUT INSIDE OF WELL:
        8 eggs                                                       2 teaspoons vanilla
        1 ½ cup  milk


        Instructions
        Beat eggs with other ingredients and add to well. Mix into dough and work dough
        until soft and a bit sticky. Roll out dough about 1/8 inch thickness. Make circle shapes
        about 4 inches across. Add a teaspoon of fig mixture in center of dough. Roll and
        shape and seal ends. Put 3 little holes on top and put in ungreased pan in a preheated
        375 degree oven for about 25 minutes or until lightly brown.
        OPTIONAL: put a little cherry piece on top for decoration or before baking brush
        with an egg mixture .

        VIRGINIA MAZZOLA’S ORANGE COOKIES

         Ingredients
        9 eggs                                                       1/2 pound melted butter
        2 ½ cup sugar                                                juice of a large orange
        1 orange grated rind                                         8 cups flour
        5 teaspoons baking powder                                    pinch of salt


        Instructions
        Melt butter and cool a little. Then add eggs and beat until well blended and smooth. Add
        the rest of the ingredients to form a dough. If the dough is too dry, add a little milk. Drop
        by the teaspoon onto a greased cookies sheet and bake at 375 degrees until golden.
