AUNT ETHEL’S APPLE, PEACH OR PLUM CAKE
Ingredients
CREAM TOGETHER:
1/2 cup butter
1/2 cup sugar
ADD:
2 beaten eggs and cream together
ADD:
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
Instructions
Blend together. Put into a greased and floured 8x8 pan. Slice fruit and arrange on top.
SPRINKLE ON TOP:
1/2 cup sugar
1/2 teaspoon cinnamon
Bake at 375 degrees for 30 minutes.
I grew up at 23 Waterview Place, Lynbrook, New York. I lived there until I was married.
Ethel Battenberg lived in the house across the street in the second floor apartment.
Aunt Rowena Zinn lived on the first floor. Aunt Ethel was a good baker and she gave
this recipe to my mother, who passed it on to me.
CRUMB CAKE
Ingredients
1 yellow cake mix
CRUMBS:
1 ½ cup butter
dash of salt
3 cup flour
1 cup sugar
Mix together until crumbs form.
Instructions
Mix together as directed on cake box and pour into greased and floured large pan. Bake
at 350 degrees for 20 to 25 minutes or until light brown. Sprinkle crumbs on top and
bake for an additional 15-20 minutes.
