HERTA HUBLER’S CHEESE CAKE

        Ingredients
        CRUST:
        1/2 package zwieback or graham crackers                                  2 tablespoons sugar
        2 tablespoons butter



        Instructions
        Roll crackers into crumbs. Cream butter and sugar and mix with the crumbs.
        Rub this mixture until well blended and put in bottom of 10 inch spring form.
        Press down even all around.



        Ingredients
        CAKE:
        1 cup sugar                              1 ¼ pound cream cheese
        2 tablespoons flour                       pinch of salt
        1 teaspoon vanilla                       4 or 5 eggs separated
        1 cup heavy cream



        Instructions
        Cream the sugar and cream cheese until well blended. Add flour, salt, vanilla and
        beaten egg yolks. Mix well and then add the heavy cream. Beat the egg whites and
        then  fold  into  mixture.  Pour  mixture  into  spring  form  prepared  with  the  cracker
        crumbs and bake in a 325 degree oven for 1 hour or more until no impression is left
        when touched in the center with finger. When finished, turn o  the oven and leave in
        the oven for about 1/2 to 1 hour longer to keep from falling.


        TOPPINGS: Herta either left it plain or sometimes added cherries.


        My Mom, Herta Nehlsen Hubler used to make this cheese cake for every party, or to
        bring to someone’s home for a special occasion. It was always a big hit!! When I was
        young, mom used to tell me, “you could tell a great cheese cake when there was a crack
        on the top.” I never could tell if she was teasing me or not.
