MARY MAZZOLA’S APPLE CAKE
Ingredients
1 teaspoon lemon juice
2 teaspoons cinnamon
1/4 cup sugar
3 apples peeled, cored and chopped into 1 inch pieces
Mix all ingredients and set aside.
Ingredients
1 ½ cup sugar 4 eggs beaten
1 cup vegetable oil 2 ½ teaspoons vanilla
1/3 cup orange juice 3 cups flour
1 teaspoon salt 3 tablespoons baking powder
Instructions
Mix together sugar, oil, eggs, vanilla and orange juice. Add to the mixture the flour,
baking soda and salt. Mix together and then fold in the apple mixture. Pour into a
greased and floured tube pan. Bake for 50-60 minutes at 325 degrees.
Ron and I used to play pinnacle with Aunt Mary and Uncle Joe for many years. I always
partnered with Uncle Joe and Ron with Aunt Mary. Uncle Joe and I won the majority of
the time. It was always a lot of fun. When we finished the game, we always had co ee
and cake. When we were at Aunt Mary and Uncle Joe’s house, Aunt Mary usually made
her Apple cake. It always had to be served with fresh home made whip cream!.
MARY MAZZOLA’S POUND CAKE
Ingredients
3/4 pound butter 2 cups confectioners sugar
6 eggs 2 cups flour
1 teaspoon vanilla raisins (optional)
Instructions
Bake at 350 degrees in a floured and greased pan for 50-60 minutes.
