CORN BREAD OR CORN MUFFINS

        Ingredients
        1 cup corn meal
        1 cup milk

        1 ½ cup f lour
        1 egg
        3/4 cup sugar
        1/2 cup water

        1/2 teaspoon salt
        1/4 cup melted butter
        4 teaspoons baking powder



        Instructions
        Mix all ingredients and put into greased and f loured loaf pan at 425 degrees for
        35 minutes.



        The corn meal I bought was freshly ground. Many bags of fresh corn meal were bought
        at Philipsburg Manor in Westchester County on our weekend vacations that we spent
        there. We usually stayed at the Marriott Westchester, New York. I always made this
        for Thanksgiving.




        CRANBERRY ORANGE BREAD

        Ingredients
        1/2 cup of orange juice

        1 egg
        2 tablespoons cooking oil
        2 cup f lour
        3/4 cup sugar

        1 ½ teaspoons baking powder
        1 teaspoon salt
        1/2 teaspoon baking soda
        1 cup chopped cranberries

        1/2 cup nuts



        Instructions
        Combine orange juice, egg, and oil into a mixing bowl. In another bowl, stir  together
        f lour, salt, sugar, baking powder and soda. Add orange juice mixture to f lour mixture
        and stir until moistened. Fold in cranberries and nuts. Pour into lightly greased and
        f loured loaf pan. Bake at 350 degrees for about 50-50 minutes.
