HERTA HUBLER’S SWEDISH MEATBALLS
Ingredients
2 pounds ground beef/pork/veal 1/2 teaspoon dried thyme
1 large finely diced onion 1/4 teaspoon ground black pepper
butter for frying 1/4 teaspoon nutmeg
1 cup plain bread crumbs * 1 tablespoon parsley
1/2 cup half and half 2 teaspoon salt
2 slightly beaten eggs
Instructions
Sauté onions in 2 tsp butter. MUST use butter for this dish that is the secret as my
mom said. Allow onions to cool. Put onions and all other remaining ingredients with
meat in a large bowl and mixture. Form into small 1 inch balls. In frying pan start with
2 tsp butter and begin frying. Turn the meat often.
GRAVY
Ingredients
3 tablespoons butter 3/4 cup half and half
3 to 4 tablespoons flour 1 cup sour cream
1 ½ cup beef broth
Instructions
Add the butter to pan drippings from the meatballs and stir in the flour. Cook 1
minute. Remove from heat and slowly stir in half and half, broth, and sour cream.
Add meatballs, cover and cook until meatballs are heated all the way through.
Garnish with paprika and parsley.
* My mother, Herta Hubler used 3-6 crumbled zwieback cookies as bread crumbs
SWEAT AND SOUR SAUCE SWEDISH MEATBALLS
Ingredients
1 12 ounce bottle chili sauce juice of one lemon
1 10 ounce jar of grape jelly
Combine and stir well. Heat on low flame until mixed then add meatballs
