600g chopped rhubarb
(fresh or frozen)
1 small red onion (chopped)
2 garlic cloves (finely chopped)
150g sugar
75 ml cider vinegar
3/4 tsp ground ginger
½ tsp cumin seed
½ tsp ground cinnamon
½ tsp chilli flakes
Method
1. In a large pot combine
sugar, vinegar, garlic, cumin,
cinnamon, and chilli.

and simmer uncovered until
