FOR THE TAHINI         7.  When the oil is hot, use a small, 1 oz. (½-inch)
               SAUCE:                 ice cream scoop to scoop the falafel mixture into
               ⅔ cup tahini (sesame   balls and drop each one into the hot oil, working
               paste)
                                      in batches if necessary. Deep-fry each batch for
               3 tbsp. tater, plus    2 to 3 minutes, or until the falafel are golden
               more as needed         brown.
