INGREDIENTS            INSTRUCTIONS

               FOR THE TAHINI         1.  Preheat the oven to 350°F and line an 8-inch
               CRUST:                 baking dish with parchment paper.
               ½ cup rolled oats
                                      2.  Combine the oats and sesame seeds in the bowl
               ½ cup sesame seeds     of a food processor and pulse for 30 seconds. Add
               8 dates                the dates, tahini and salt and blend until

               ¼ cup tahini           combined, about 90 seconds. Press the mixture
                                      down into the prepared baking dish until evenly

                                      distributed. Press to pack it down. Bake until the
                                      edges are golden brown, about 15 minutes.
               FOR THE LEMON
               FILLING:               3.  Combine the lemon juice, tofu, Swerve,
               1 cup fresh lemon      arrowroot starch and lemon zest in food processor
               juice
                                      until smooth. Pour onto the baked crust and bake
               14 oz. firm tofu       for an additional 35 minutes. Let cool, then

               ¼ cup plus 1 tbsp.     refrigerate for about 90 minutes until the custard   DESSERT
               Swerve sugar           is set. Cut into 12 squares and lift out, using the
               replacement            parchment paper.
