White Whiskey Baked Beans with


                                                      Bacon




                                                  Makes 11 cups



                 “Henry was bending over and adding ice to the babbling pot of beans when he was startled.
                   . . . He straightened up in time to see a dim form disappearing across the snow into the
                                                     shelter of the dark.”



                This recipe swaps the heavier, more tomato-ey flavors of traditional baked beans for lighter
                additions like garlic, onion, and maple.


                INGREDIENTS

                 1 lb. great northern beans
                 1 lb. navy beans

                 1 lb. bacon

                 2 tablespoons melted bacon fat (reserved from bacon)
                 1 sweet onion

                 3 cloves garlic, minced
                 ¾ teaspoon salt

                 ¼ teaspoon pepper

                 10 cups chicken stock
                 2 tablespoons whiskey

                 3 tablespoons maple syrup
                 1 tablespoon snipped fresh parsley



                INSTRUCTIONS

                1 Rinse each set of beans and soak separately in 6 cups of water for

                8 hours.


                2 Drain the water and transfer beans to a large pot. Cut the bacon
                into bits and fry. Transfer to a plate lined with a paper towel. Cover
