GREAT Carnitas

                                                  (Pork)



                                         Ingredients



               1 pork shoulder
               1 garlic pod
               3 bay leaves
               1 onion peeled and quartered
               3 cups orange juice
               Chicken broth to cover meat
               Lard or oil for frying
               Salt to taste

                                         Lagniappe




               In a large pot brown the roast on both sides, cover it with the orange juice
               and broth; add the bay leaves and the onion. Bring to a boil, reduce heat and
               simmer for 3 hours.

               Turn up the heat and boil all the liquid off the meat. When the liquid is gone
               take some tongs and break up the meat into small chunks, golf ball size or
               smaller.

               Continue to fry them in the remaining fat adding salt and pepper.

               When ready, the pieces will become brown and crispy.  Serve it, as is, with
               rice and beans or chop it into small pieces for tacos or burritos with
               guacamole sauce.
