Rubio’s

                                “Baja” Fish Tacos


                                         Ingredients



               Batter of your Choice
               ½ cup Mayo
               ½ cup plain Yogurt
               Pico De Gallo or salsa of your choice
               Cabbage
               Limes cut into wedges.
               Flour or corn Tortilla’s
               Pollack, Halibut, or Tuna fish filets

               If you are not from the southwest you have probably never heard of fish
               tacos.  Rubio’s Fresh Mexican Tacos are the standard for this regional
               favorite.

               Rubio’s secret is the plain white sauce made with 50/50 Mayo & plain
               Yogurt.

               Cut your fish filets into strips, bread and fry them just prior to serving, these
               tacos need to be served fresh.  That’s Rubio’s other secret.

               Heat the tortilla; spread a thin layer of salsa, top with the fried fish filet.
               Drizzle the white sauce over the fish filet and garnish with the shredded
               cabbage. Serve with some lime wedges and cold Mexican beer
