                                  Armadillo eggs




                                         Ingredients


               8 oz shredded cheddar
               8 oz cream cheese
               BBQ pork or Carnitas (shredded)
               2 eggs
               1 cup butter milk
               2 cups panco or corn Meal
               10 jalapenos


                                         Lagniappe




               Mix both the cheeses together

               Fill the peppers with the cheese and meat mixture

               Cover in buttermilk then flour twice

               Dip the pepper in the egg and roll in the Panko or the Corn Meal

               Deep fry at 375 degrees
