                                          Braciole




                                            Ingredients


               1 1/2 lbs flank steak
               1/2 cup fine grated Parmesan
               4 garlic cloves, minced
               1/4 cup parsley, minced
               3 tbsp olive oil
               4 cups marinara sauce
               1 lb favorite pasta, cooked

                                            Lagniappe



               Pound out the meat till very thin and season the meat on both sides with salt
               & pepper.

               In a bowl combine the parmesan, garlic, and parsley

               Spread the dry mix on each filet of flank steak and roll up as tight as possible

               Secure each roll with a toothpick or bakers string.

               Place the oil in a heavy skillet and brown each roll of meat.

               Add the marinara sauce and bring to a boil

               Reduce the heat and simmer for 1 to 1/2 hours or until meat is very tender

               Serve over pasta
