Taco lingua

                                          (Charlie’s Favorite)


                                         Ingredients



               1 beef tongue
               4 bay leaves
               1 large garlic pod
               Salt & pepper

                                         Lagniappe



               Boil the cow tongue along with the garlic pod and bay leaves at a low heat
               for three to four hours. If the skin on the tongue does not peel off easily it is
               not ready.

               Allow the tongue to cool to touch cut it into very thin slices and chop into
               small pieces.

               Serve the Lingua on warm tortillas with chopped cilantro, grilled green
               onions, avocado slices, and any tomato type salsa you like on the side.

               Squeeze a little fresh lime juice on the taco mixture just before eating
