                                            Bad ass


                                      Brisket rub

                                             (Ralph’s favorite)

                                         Ingredients

                                              Cajun Brisket

               2 tsp garlic powder
               21/2 tsp paprika
               1 tsp black pepper
               1 tsp onion powder
               1 tsp cayenne
               11/4 tsp oregano
               11/4 tsp dried thyme

                                         Lagniappe




               This rub is really great for any type of Beef; it is not as sweet as the rubs
               used on pork, chicken and fish.  Make sure you completely rub down the
               meat with yellow mustard or smoke oil prior to applying the rub.

               Mix all the ingredients together

               For less heat, chipotle pepper has a smokier flavor to it than cayenne which is
               a much hotter pepper.

               Store in a closed container for up to a year
