Memphis, “Rendezvous”
Dry rib seasoning
(Ralph’s favorite)
Ingredients
1/3 cup paprika
2 tbsp chili powder
1 tbsp garlic powder
1 tbsp Greek oregano
1 tbsp kosher salt
2 tsp black pepper
2 tsp whole mustard
1 tsp celery seed
2 tsp Rosemary

Memphis “rib dust”
¾ cup packed brown sugar
¾ cup white sugar
½ cup paprika
¼ cup garlic powder
2 tbsp black pepper
2 tbsp ground ginger
2 tbsp onion powder
2 tsp rosemary
These recipes came from a guy in a bar on Beale St in Memphis who used to
work the grill at the famous Rendezvous. The secret to the dust, they
actually use and the product they sell is the rosemary. The rub is simply
sprinkled on before grilling and before serving. That is why they call it a
“dust” instead of a rub. Rendezvous ribs are served dry with sauce on the
side.
