Basic

                               Burger recipe


                                         Ingredients


               1 lb 73/27 ground chuck or ground short rib meat
               ¼ tsp onion powder
               ¼ tsp garlic powder
               Table salt
               2 tbsp butter
               1 tbsp beef or bacon fat


                                         Lagniappe


               Mix all the ingredients in a bowl and make into ¼ lb balls.

               Burger must be refrigerated for at least 30 minutes prior to cooking

               Place your griddle or skillet on the grill and heat it to at least 350 (very hot)

               Place the butter on the griddle, (it will foam immediately) spread it out
               evenly and place your buns  cut side down on the griddle till they turn brown,
               remove and set aside

               Clean the griddle of the butter and melt some beef or bacon fat.  When it
               begins to smoke place the burger ball on the griddle and smash them down to

               about 1/4  inch.  Sprinkle with salt and leave the grill lid open.  Don’t touch
               the burgers for about 3 to 5 minutes.

               When the bottom turns dark brown and crusty, (not burnt) flip the burgers.  If
               you are making green chili or cheese burgers now is the time to add them to
               the burger.  Cover the burgers with a pot cover or foil to steam the cheese.

               Check the color of the bottom in a couple of minutes, when ready remove the
               burgers to the buns and garnish to taste
