Mexicali burger
Ingredients
1 cup red chili sauce or enchilada sauce
1/3 cup ground tortilla chips
1.5 lb ground beef
2/3 lb soft Mexican chorizo
¾ lb cooked bacon
salt
ground pepper
1 small red onion sliced
1 Serrano or Jalapeno pepper sliced
¼ cup minced cilantro
½ head lettuce
¼ cup guacamole
6 whole eggs

Heat the red chile or enchilada sauce to a simmer and stir in enough of the crushed
tortilla chips to thicken to the consistency of mayonnaise. Set aside and chill.
Mix the hamburger and chorizo together season, form into patties, cover and chill till
ready to grill
Toss the sliced tomatoes, onion, sliced chilies and cilantro together with lime juice,
season and set aside.
Grill the patties to at least medium because of the chorizo. Cook the eggs sunny side
up.
To assemble the burger, spread the enchilada sauce on the bottom bun. Top with a
layer of lettuce, and a layer of the tomato mix. Place the burger on the stack and top
the patty with a spoonful of guacamole and crispy bacon. Top with a sunny side egg
and top the whole concoction with the top bun
