■ Dish Story
In Hakka dialect, “企” (“qi”) means “standing”. “Wok-edge standing” refers to the meatballs sticking
to the edge of the wok, not to someone standing by the stove. “Cow meets pig” indicates a mixture
of beef and pork, which is characteristic of traditional Xingning cuisine.
