腐卷是兴宁传统“十二大碗”中的一道名菜,寓意富贵富裕。这道菜可煲可蒸,风味独特。
潮州菜的“炸果肉”,原型正是源自兴宁“炸富卷”。在抗战时期,兴宁人远赴潮汕一带谋
生,把技艺传到当地并发扬光大。“一刀落猪肉”为前腿肉和后腿肉,瘦多肥少,肉质细腻
鲜美。
■ Dish Story
Crispy Tofu Skin Roll is a renowned dish in Xingning’s traditional “Twelve Great Dishes”, symbolizing
wealth and prosperity. This dish can be braised or steamed for a unique flavour. The Chaozhou cui-
sine’s fried “fruit meat” is derived from Xingning’s fried tofu skin rolls. During the wartime, Xingning
people migrated to the Chaoshan area for work, bringing this cooking technique with them and fur-
ther popularizing it. “Yi dao luo pork” refers to pork from the front and hind legs, with a lean-to-fat
ratio that ensures a tender and delicious taste.
