■ 名菜故事:
酿腐衣和酿西利盛行于五华华城,是当地是逢年过节、婚宴喜庆的保留菜式,寓意如意、吉
祥、圆满的祝愿。作为当地宴席 “十二大碗”中的代表菜,酿腐衣和酿西利素有“山珍海
味”之美誉。两者合一为菜时,也常用二汤和咸菜煲制。腐衣是指大块的鲜腐皮,干而薄,
柔软可卷,不易碎。西利(淡菜)是指贻贝(青口)的干制品,味道鲜美。
■ Dish Story
Stuffed bean curd skin and stuffed mussels are popular dishes in Huacheng, Wuhua. They are tra-
ditional dishes for festivals, weddings and celebrations, symbolizing good fortune, harmony and
completeness. As one of the dishes in the local banquets known as “Twelve Big Bowls”, these dish-
es are referred to as “delicacies from mountain and sea”. They are often combined into one dish
and are often cooked in light broth with salted vegetables. The beancurd skin refers to large, fresh
bean curd sheets that are dry, thin and flexible enough to roll without breaking. Xili refers to dried
mussel (green-lipped mussel) meat, known for its delicious and fresh flavour.
