Olive paste is a specialty of Liuhuang, made from fresh olives, galangal and salt, crushed in a stone
mortar to produce a fragrant, salty and spicy paste. Liuhuang is located near the Han River, an area
rich in freshwater. Locals enjoy cooking freshwater fish with olive paste t created unique dishes.
Chefs in Meicheng are skilled at steaming freshwater fish with using olive paste , adding a distinc-
