Maintenance







    ➢ All surfaces that come in contact with food must be easily

        accessible for cleaning and inspection.



    ➢ If the equipment needs to be dismantled for cleaning and

        disinfection, it should be designed and constructed in a way

        that it can be dismantled easily, preferably without using
        any tools.




    ➢ This includes machinery guards, catch pans, scrapers, and

        side panels.



    ➢ If any tools are necessary for safety reasons, they should be

        standard instruments like screwdrivers.



    ➢ Enough space should be provided between surface

        junctions to facilitate easy access for cleaning.
