Wendy's MyMT Fish Pie!

               Fish – enough for family. Rub over with olive oil and some pesto
               2-4 Kumara and 2-4 Carrots (depending on family size) – cooked together and
               mashed with butter. I also sneak in a parsnip
               but don’t tell the kids!
               Spring onions (chopped) and some garlic – to
               fold through the mashed Kumara mix
               Spinach leaves and or silverbeet
               Frozen Peas
               Salt and Pepper to taste
               Grated Organic Cheese (I buy Mainland
               Organic cheese in NZ)
               Organic Cream (optional)

               Heat oven to 200 degrees celcius. Butter an
               oven dish. Place the oiled and pesto'ed fish
               in the bottom of the dish. Sprinkle a bit of cheese over the fish and if you want
               also dribble some cream over top. Then sprinkle the peas over top. Add a layer of
               spinach or silverbeet or both (depending on family preferences). Add the kumara/
               carrot/ parsnip mash all over the top.
               Sprinkle with cheese. Add salt and pepper.
               Cook until fish is cooked through and the cheese has gone slightly brown.
               Garnish with chopped parsley. Serve with a salad or green beans or just on its own
               with a side dish of relish (or in my son’s case, tomato sauce).
               Bon Appetit - and as usual, cook extra, so you can have it for lunch the next day.
