Special Cassava Cake


             1 kg grated cassava                Use only newly
             2 c coconut cream                 harvested cassava
                                               and fresh coconut
             6 eggs                                  cream.
             1 ½ c butter

             ½ c white sugar
             3 c coconut meat, shredded
             3 c shredded cheese

             ¾ c condensed milk
             ¾ c evaporated milk



             For the topping:
             ¾ c condensed milk

             1 ½ c shredded cheese
             2 tbsp flour

             2 tbsp sugar
             1 c coconut cream

             Pre-heat the oven to 375°F. Combine and mix the cassava, coconut

             meat, melted butter, cheese, condensed milk, evaporated milk and
             sugar.

             Add the coconut cream. Beat the eggs in a separate bowl and add in

             the mixture and mix well.

             Transfer to a baking pan. Bake for 30 - 45 minutes.

             Heat small pot in low fire. Add in the flour, sugar, cheese, condensed
             milk and mix well. Pour the coconut cream. Keep stirring until you get

             the desired consistency. Top the cassava with the mixture and bake for
             another 10 -15 minutes.
