Butternut Munchkin



            6 c all purpose flour, sifted                  Yield: 48 pcs munchkins
            2 c cocoa powder                               or 3-4 llaneras
            3 ¼ c white sugar

            1 ½ c butter
            1 ½ tbsp baking powder                          For the streusel:

            1 tbsp baking soda                              4 c all purpose flour
            1 ½ tbsp dark coffee                            1 ¾ c white sugar
            1 ½ tbsp salt                                   1 ½ c butter

            8 eggs                                          1 ½ tbsp nutmeg
            2 c full cream powdered milk                    powder

            1 ½ tbsp vanilla                                1 ½ tbsp orange
            2 tsp vinegar                                   food color
                                                            1 c toasted coconut

            For the glaze:                                  or desiccated
            3 ½ c powdered sugar                            coconut

             ½ c evaporated milk
            1 tbsp vanilla



            Combine all the ingredients. Form into a ball and put in puto or cake
            molder greased with butter. Steam in boiling water for 45 minutes up

            to 1 hour.


            Combine powdered sugar, evaporated milk and vanilla to glaze

            munchkins or brush on top of cake and sprinkle with streusel or roll
            into streusel. Chill for 2 hours to set.
