Morning Glory Muffins
6 c whole wheat flour or all purpose flour
3 ¼ c raisins
3 ½ c dark brown sugar
1 ¼ tbsp baking soda Check your brown
2 ¼ tbsp baking powder sugar for stones
3 ¼ tbsp ground cinnamon and dirt. Buy only
1 tbsp ground ginger from trusted
1 ½ tbsp salt sources.
12 XL eggs
½ c all purpose cream
⅓ c vegetable oil
2 c butter, softened
¾ c pure orange juice
2 tbsp vanilla extract
1 c evaporated milk Use only fresh
1 c full cream powdered milk carrots and apples
6 c peeled and shredded carrots for the best
results.
3 large apples, peeled, cored and shredded
2 c desiccated coconut
1 ¾ c chopped walnuts Apples weigh heavier when
1 ½ c dried fruits they are fresh so choose the
heavier ones when buying.
1 c wheat germ
Cream butter, sugar and eggs. Add milk, milk powder, orange juice, vanilla,
oil, flour, raisin, walnuts, dried fruits, flour, baking soda, baking powder,
desiccated coconut, cream, salt, carrots, apples, ginger, wheat germ and
cinnamon powder. Blend well.
Fill muffin pans till ¾ full. Let it rest for 30 minutes.
Preheat the oven. Bake at 350°F for 25-30 minutes.
