Special Halayang Ube




             2 kg Ube (purple yum), boiled

             1 c evaporated milk
             3 c kakang gata
             2 ¾ c condensed milk

             1 ½ c sugar
             1 ¼ c butter

             1 tbsp vanilla
             4 c grated cheese (optional)



             In a casserole, bring water to a boil. Cook ube till soft and mashed.



             In a wok, put all ube, kakang gata, condensed milk, sugar, and
             evaporated milk. Stir constantly to avoid burning. If you must, use a
             nonstick pan.



             When the cooked ube reaches your desired consistency, put butter

             and vanilla.


             Transfer to a container and top with grated cheese. Chill before

             serving.
