Mini baguettes with avocado, hake and grapefruit mayo
Makes 12 | Preparation time: 30 minutes
What you’ll need:
Ingredients
1 baguette, sliced into 1 cm diagonal pieces
200g fresh hake fillet, skinned and deboned
Olive oil
Salt and freshly ground black pepper
1 ripe avocado
Juice of ½ a lemon
1 grapefruit, zested, segmented and juice reserved
2-3 Tbsp (30ml-45ml) mayonnaise
2 Tbsp (30ml) freshly snipped chives
2 Tbsp (30ml) micro-greens to garnish
1 Tbsp (15ml) castor sugar to sprinkle
