For the croque madame

12 slices of white bread, crusts removed

4 Tbsp (60ml) melted butter
200g Emmenthal cheese, grated
180g ham, cubed
Cheese sauce (see below)
12 quail eggs
Micro-greens to garnish

For the cheese sauce

2 Tbsp (30ml) butter
2 Tbsp (30ml) flour
400ml milk
1 tsp (5ml) Dijon mustard
