Franck’s baba ghanoush, with crudités
Serves 6–8 | Preparation time: 30 minutes | Cooking time: 1 hour
What you’ll need:

For the baba ghanoush
2 large aubergines
1 clove of garlic, roughly chopped
1 red chili, sliced
Small handful fresh coriander, roughly chopped
Small handful fresh marjoram, roughly chopped
Small handful fresh flat-leaf parsley, roughly chopped
Small handful fresh mint, roughly chopped
Juice of ½ a lemon
2 Tbsp (30ml) tahini paste
A pinch of salt
¼ cup (60ml) mayonnaise
Olive oil for drizzling
Toasted black and white sesame seeds, for garnish
