How to master chocolate moulding
Chocolate moulding is all about melting, tempering and transforming chocolate into brilliant
new shapes or forms. This can be as simple as creating solid chocolate lollipops for the kids
or more intricate decorated moulds with fillings for an after dinner treat.
Types of chocolate moulds and their uses
Modern professional chocolate moulds are made predominantly from polycarbonate
plastic. They’re ideal for the task because of their smooth texture and firm structure. There
are other cheaper plastics available for entry-level chocolate moulding but they don’t last as
long and are not as detailed in design.
You can buy single-sided polycarbonate moulds, double-sided 3D moulds and silicone
moulds, each intended to be used for a specific application:
A 3D double-sided mould is used to create hollow novelty shapes or figurines like the
LINDT bear and the LINDT GOLD BUNNY.
A single-sided mould is used to make individual chocolates with fillings.
Silicone flexible moulds are becoming very popular amongst home users. These
moulds are best suited to creating solid chocolates rather than hollow shells.
Other equipment needed to cast a mould
Apart from moulds, here’s a list of tools that will make your chocolate-making life much
easier.
A chocolatier’s scraper, for cleaning work surfaces and scraping off excess chocolate
A thermometer, for making sure the chocolate is at just the right temperature
