E. Zaru Soba (Cold Soba Noodles) Recipes
Ingredients:
1. Dried soba noodles 400 gr
2. Mentsuyu/tsuyu (concentrated noodle soup base) 90 gr
3. ced water 90 ml
For the Toppings/Garnish
1. Green onions/scallions 5 gr
2. Shredded nori seaweed (kizami nori) 5 gr
3. Wasabi (optional) 3 gr
For the Mentsuyu (Concentrated Noodle Soup Base)
1. Sake 20 gr
2. Mirin 15 gr
3. Soy sauce 30 gr
4. Kombu (dried kelp) 1 pcs
5. Katsuobushi (dried bonito flakes) 30 gr
How to make:
1. Gather all the ingredients.
To Make the Mentsuyu (Concentrated Noodle Soup Base)
1. In a medium saucepan, add the sake and bring it to a boil over medium-high heat.
Let the alcohol evaporate for a few seconds.
2. Add the soy sauce and mirin (I add an extra 1 Tbsp mirin for my family's
preference).
3. Add the piece of kombu and the dried bonito flakes (katsuobushi).
