Golbheda ko achar




        Tomato and coriander sauce


        Ingredients:
        1 ½ teaspoons olive oil
        2 cloves garlic
        1 chilli (or more to taste) finely chopped
        500g fresh tomatoes finely chopped
        ¼ teaspoon turmeric
        salt (to taste)
        ¼ cup water
        1 small bunch coriander finely chopped


        Method:
        1. Heat oil in a fry pan over medium heat and add garlic. Sauté for a few minutes
            until brown.
        2. Add chilies, tomatoes, turmeric and salt and stir for a couple of minutes, then
            add water and cook for a further few minutes.
        3. Remove pan from heat, add coriander and stir in well.  Allow to cool (picture
            top left)
        4. Place  mixture in processor and blend until smooth (picture bottom left)  Serve
            with hot momos!


        *Tip:  the coriander can be left out for a plain tomato achar (page 24) or for a
        spicy version, add a pinch of chilli powder and Szechuan pepper powder
        (delicious with the Pyaji Pakauda, page 50)
