            Curried parbal



            Ingredients:
            1 tablespoon oil
            a pinch of fenugreek seeds
            1 teaspoon turmeric powder
            2 teaspoons cumin powder
            500g parbal or zucchini - chopped into sticks
            1 onion - finely chopped
            2 small tomatoes - finely chopped
            salt to taste



            Method:
            1. Heat oil in a fry pan, add fenugreek seeds and sauté for a couple of
                minutes until colour changes to dark brown.
            2. Add onion and saute until soft and lightly browned.
            3. Add turmeric and cumin powder and cook for a couple of minutes.
            4. Add chopped zucchini, tomatoes and salt and cook stirring
                continuously for 15 minutes or until zucchini is soft.
