                                                                                    3 SCRAMBLEDEGGS
                                                                                    WITH BACON

                                                                                    PREP + COOK TIME 20 MINUTES SERVES 4
                                                                                    Cook 4 chopped trimmed bacon slices
                                                                                    in a small frying pan for 2 minutes
                                                                                    each side or until browned; drain
                                                                                    on paper towel. Make the Basic
                                                                                    Scrambled Eggs as recipe directs (see
                                                                                    page 102). Spoon onto toast. Top with
                                                                                    bacon and 1 cup picked watercress
                                                                                    sprigs. Sprinkle with black pepper.
