Chunky Guacamole

              Vegan
          Gluten-Free
                       Whether served with Baked Tortilla Chips (page 133), dolloped on
                       tacos, or spread on toast, this simple dip will make you the hero at
                       the next party. It comes together quickly and is full of fresh flavor.

                       Ingredient Tip: Use the lime juice to sprinkle over the avocado
                       after they are cut so they don’t turn brown.

                       2 avocados, chopped           ¼ cup chopped fresh cilantro
                       1 tomato, chopped             ½ teaspoon salt
                       1 jalapeño pepper, minced     ½ teaspoon freshly ground
                       2 garlic cloves, minced          black pepper
                       3 tablespoons lime juice
                       In a medium bowl, combine the avocados, tomato, jalapeño, garlic,
                       lime juice, cilantro, salt, and pepper. Mash the guacamole with a
                       fork to the desired consistency.

                       Makes 2 cups. Prep time: 5 minutes.
