Creamy Caesar Dressing
Gluten-Free
This creamy dressing is the perfect accompaniment for crunchy
romaine lettuce leaves, freshly grated Parmesan-Reggiano cheese,
and 100% whole-wheat croutons. It also makes a good basting
sauce for chicken and pork.
Ingredient Tip: Like classic Caesar dressing, this recipe calls for
anchovies, which may not appeal to some. The anchovies serve
to add a briny flavor to the dressing, but feel free to omit them if
you’d like.
½ cup plain Greek yogurt 2 teaspoons anchovy paste
2 tablespoons lemon juice ¼ teaspoon salt
1 tablespoon white ¼ teaspoon freshly ground
wine vinegar black pepper
1 tablespoon Dijon mustard ¼ cup extra-virgin olive oil
2 garlic cloves
1. In a food processor, combine the yogurt, lemon juice, vinegar, mus-
tard, garlic, anchovy paste, salt, and pepper. Process until smooth.
2. With the food processor running, add the oil in a slow, steady
stream. Store the dressing in an airtight glass container in the
refrigerator for up to 1 week.
Makes about 1 cup. Prep time: 10 minutes.
