Cilantro-Lime Vinaigrette

This dressing is particularly harmonious with Mexican and Latin
dishes. Serve it on taco salads or use it to flavor fresh salsas and
guacamoles.
Storage Tip: Fresh cilantro is a handy, tasty herb to keep in the
refrigerator. To help keep it fresh longer, remove the twist tie from
the bunch and snip of the ends under cold running water. Wrap
the bottom of the stalks in a damp paper towel and place the whole
bunch in a large zip-top plastic bag. You’ll have fresh cilantro for at
least a week.
½ cup fresh lime juice ½ teaspoon salt
1 teaspoon grated lime zest ½ teaspoon freshly ground
1 garlic clove, minced black pepper
3 tablespoons extra-virgin 2 tablespoons chopped
olive oil fresh cilantro
1 tablespoon honey
In a small bowl, whisk together the lime juice, lime zest, garlic, oil,
honey, salt, pepper, and cilantro. Store the vinaigrette in an airtight
container in the refrigerator for up to 3 days.
