1-2 Growth of Food Service Industry

      The food service industry is in progress than other
industry in U.S.A in 1973, there were 490.000 establishments.
In 1977, the number increased to 535.000, in 1991, 657.000.
Consumers are spending a growing proportion of their food
dollar away from home, 33.6 percent in 1972 and 43 percent in
1991. Food service industry sales increased dramatically in
1980 rising from $ 42.8 billion in 1970 to $ 119.6 billion. In
1991, food service sales were $ 248.1 billion. In 1999, food
service sales are projected to be $ 354 billion.

      In 2002 industry sales were $ 407 billion rising from $
391.9 billion in 2001. In 2003 food service sales are projected
to be $ 454 billion.

      According to the National Restaurant Association
(NRA) 2008 Pocket Fact book, restaurant sales are projected to
be $ 558 billion in 2008. In 2018 restaurant employees are
projected to be 15.1 million. In 2005 restaurant industry
