Beautiful enough for a birthday and, if you


                        wanted them that way, spectacular enough


                        for a wedding.



                          While pie may have a fixed definition in the


                        average American lexicon to only include


                        those pastries Mrs. Cleaver might have



                        cooling on her windowsill on any given day,


                        on Elm Street we traveled back as far as pie


                        history might take us.



                          Pastry and filling made a diverse and


                        delicious marriage throughout Europe,


                        giving rise to galettes, pizza pies, quiche,



                        napoleons, strudels, and a rainbow of tortes


                        and tarts. These all found their way into my


                        pastry case.


                          I’d like to share my journey with you, so



                        that you may explore pie in all its glory,


                        elevate it with your very own elegance, and
