How to Glaze a Cupcake
Next to serving a cupcake with a dusting of confectioners’ sugar, glazing is
the quickest way to frost a cupcake, and it is a relatively lower-fat option. I
have found the easiest way to glaze is to line up the cupcakes on a baking
rack placed over a sheet of waxed paper to catch the drips. For a blanketed
look, use a big serving spoon or ladle and spoon a couple of tablespoons of
glaze over each cupcake, letting the glaze drip down the sides of the liners.
For a cross-hatch pattern, drizzle the glaze across the cupcake in two or
three lines with a soupspoon, then change directions and glaze in two or
three lines at right angles to the first lines. If you are garnishing the glaze
with citrus peel, finely chopped nuts, or sugar sprinkles, do so before the
glaze has set, so the garnish will stick. Let glazed cupcakes rest 10 minutes
for the glaze to set before serving.
